So many great ideas here! I’ve already earmarked a few to try (though realistically I’ll probably start with the salt and butter, and then dream about nailing the soufflé at a later date).

I look forward to trying some of these recipes!

A couple of points when harvesting wild garlic:

1. Gently cut or tear the leaves and flower stems; don't pull the plants up, so the bulbs don't get damaged and they will grow again next year;

2. Take only what you need, being mindful of not over-harvesting a precious resource. It is only renewable if enough is left in each spot to continue growing. Otherwise nettles and other more hardy plants take over.

I have a very small patch of wild garlic now growing in my garden. It’s great when I am too busy to get to a local foraging wood. Thanks for the recipes. I shall be trying them all. Xx
